Homemade Tortilla Chips + Mango Salsa
Many thanks to Elle for giving me the opportunity to write a guest post for Elle Sees.
Do you go crazy for chips and salsa?  I do!  Like seriously crazy!  I crave chips and salsa most days.  Ever make your own chips?  What about switching things up a bit and whipping a fruit salsa?  How about mango salsa?  Let's do this!  These are also good go-tos for a picnic or the next party you're attending.  It will only take about 30 minutes to make both the chips and the salsa.  Feel free to double the recipes as you need to.
Baked Tortilla Chips (from an Eric Ripert recipe)
Preheat oven to 325-350 degrees
What you need: 
6 flour tortillas (makes about 30 chips)
olive oil
salt (use sea salt or Kosher if you've got it on hand)
black pepper (in the grinder if you've got it on hand)
pizza cutter
baking sheet
tongs
How it happens:
Slice tortillas into triangle "chip" shapes using a pizza cutter (no pizza cutter?  no worries, use a knife)
After the slicing and slicing again-- you should have about 30 chips or so.
Spread torilla chips onto baking sheet.  Liberally pour olive oil on chips and make sure both sides of chips get some oil.  You can use your hands or a brush to make sure they're well coated on both sides.  Sprinkle salt and pepper on chips.  (If there are other spices you want to add to the chips, feel free to do so!)
Bake in oven for about 12 minutes or until lightly browned.   I generally check the oven about halfway through and grab the tongs and turn the chips over to make sure both sides cook evenly.  Serve chips warm with your favorite salsa-- like the mango one below:)
Mango Salsa (from a Bobby Flay recipe http://www.foodnetwork.com/recipes/bobby-flay/jerk-chicken-with-habanero-mint-glaze-and-mango-relish-recipe/index.html scroll down for the recipe)  *serves about 4
What you need:
2 mangoes (peeled and diced up)
1/4 cup finely chopped up red onion (as finely chopped as you can)
about 2 tablespoons chopped fresh cilantro
about 2 tablesppoons lime juice
about 2 tablespoons orange juice
Salt and pepper (use sea salt or Kosher salt and ground pepper (from the grinder) if you've got it on hand)
How it happens:
Peel and dice 2 mangoes.  Very finely chop up red onion, approximately 1/4 cup. Chop up cilantro, only 2 tablespoons.  Measure out 2 tablespoons of lime juice and 2 tablespoons of orange juice.  Combine all ingredients, stir and add salt and pepper to taste.   Enjoy with your homemade tortilla chips.  And, maybe a margarita?

  2. My H and I make home made salsa all the time but we've never made our own chips. we'll definitely be giving this a try soon!
