Elle Can't Cook: Blueberry Mojitos

Earlier I posted my recipe for BBQ and thought I'd throw in a drink perfect for summer or the Fourth of July. I'm not a regular Mojito fan, but this twist with the fruit makes it delicious! It's festive (see the American flag colors?), fruity, and refreshing. And easy to make! Enjoy!

Blueberry Mojito

Ingredients:
- 1 1/2 oz light rum
- 1/4 oz fresh lime juice
- 8 mint leaves
- 8 fresh blueberries
- 1 tsp sugar
- Club soda
Garnish: lime slice and mint sprig

Muddle mint leaves with sugar in a mixing glass. Add light rum, lime juice to shake with ice. Pour into a tall glass. Drop blueberries and club soda. Garnish with lime slice and mint sprig.

Virgin: Leave out the rum and mix with Sprite/7Up/Sierra Mist to make it non-alc.

  46. YUM! Mojitos with mint from the garden and Myer's white rum have been my drink of choice this summer. Blueberries make them look even more enticing!

Now that I think of it, I have all of these ingredients in my fridge... and off of work today... is it cocktail hour yet?
