My Sandestin Trip!

I'm back from the beach, and am sharing a few (ok, a LOT) of pics from my trip. Get comfortable and come along with my on my trip to Sandestin! My favorite time of year for the beach is in the fall. Always has been--think smaller crowds, 80s temps, and plenty of fun in the sun. This is going to be so hard to narrow down my pics!

Thanks to my recent trip, I'm rocking the salty beachy wavy hair and have a little sand still on my shoes to prove it. I was going to just share pics of the beach, but had such a great time doing other things that I had to share (almost) all of it. I got to stay at the Sandestin Golf and Beach Resort in South Walton, FL, and it was spectacular. I want to go back riiiight now. You will too.



First off the beach: the water was gorgeous--several shades of sparkling blue--and the sand is the softest I've ever walked on--like powered sugar. The Florida Panhandle has the prettiest beaches in the US, hands-down. Love that Emerald Coast.

I've got a teeny cold but I didn't let it keep me down this weekend. In fact, by using my zinc tip, my cold is just about gone. To make myself feel better, I put on the brightest shirt I own (do you do this?), grabbed a cute wristlet, and headed to a casual brunch date with friends.

Elle's Atl


I was asked to do a guest post on Atlanta and thought I'd share a rough draft of what I wrote. Enjoy! Love, Elle


In the year that I've lived here, I've created a list of things to do and places to eat; some that tourists love as well as some local spots. So if you're in the awesome city of Atlanta for a day or two, here's what I suggest:


SITE SEEING

  • World of Coca Cola Museum  A favorite of mine that demonstrates the process of making the beloved Atlanta-based drink, as well as memorabilia.
  • Georgia Aquarium Billed as the world's largest aquarium and is a recent addition to the must-see list.
  • Zoo Atlanta/Cyclorama Next door to the Zoo is the Cyclorama, a huge painting that depicts the Civil War; an important part of Atlanta's history.
  • Piedmont Park This is one of my favorite places in Atlanta; you get city views while plenty of greenspace. There's always an event happening.
  • MLK Center Take a tour of the amazing life and legacy of MLK Jr.
Nearby Trips
  • Stone Mountain If you have time & the ability to travel a little outside of Atlanta, this is a must-see. Plan on staying late to see the nightly laser show.
  • 6 Flags Over Georgia For the roller coaster enthusiast and the kid at heart.
  • Roswell Ghost Tour One of the BEST ghost tours I've ever been on. (Read my account here.)
Off the Beaten Path
  • Atlanta Botanical Gardens If nature is more your thing, check out the beautiful grounds dedicated to nature education and conservation.
  • Center for Puppetry Arts This is something I never thought I would go to, but the creativity here is amazing! 
  • CNN Tours A great behind-the-scenes look at how news is made.



SHOPPING


  • Phipps Plaza and Lenox Square My pick for the poshest stores and best celeb siting. Both malls are located across the street from each other.
  • Atlantic Station One of the newest shopping areas in Atlanta with plenty to see, do, and eat.
  • Underground If you're a first-timer in Atl, this is on my list of places to go. 
  • Little Five Points This area of Atlanta is considered the melting pot of hippies, indie, and different. Eat at The Vortex.
  • Buckhead Plenty of shopping can be done around this pricey area.



FOOD
The Big Meal
No trip to Atlanta is complete without sampling the food of the South. Put a napkin in your lap and mind your manners, because there's fried food to be had!
Gotta Go: Pitty's Pat Porch A Southern tradition
Mary Mac's Tearoom Another eatery for traditional Southern cuisine.
Off the Beaten Path: The Colonnade Cash only here but the fried chicken is incredible.

Fast Food
Maybe burgers and fries are more your thing. Here are some great choices:
Gotta Go: The Varsity--bonus points if you know the ordering lingo!
Off the Beaten Path: Holeman & Finch At 10pm only 24 burgers are made. Get there early.
Ann's Snack Bar Be prepared for a long wait & order the infamous "ghetto burger."
Fat Matt's Rib Shack Listen to live blues as you eat the best BBQ in Atlanta.

Elle's Tips: Parking is rarely free in Atlanta, so have cash handy. If you plan on seeing several of the places listed above, I recommend a City Pass to save money. Also, use the Marta subway system to get around. Additionally, Atlanta has plenty of sports teams, so check the local news to see what team is playing.

Elle Can't Cook: Poppyseed Chicken Casserole


I love a simple, easy meal that's filling and calls for leftovers. Poppyseed Chicken Casserole fits the criteria for me. It's simple--just a few ingredients. It's easy--it's a casserole! Just assemble and bake for 40 min. 

It can easily be made healthier (that's how I eat it.) The pictures aren't doing it justice, I tell ya. It tastes much better than it looks. I served mine with grilled baked brussel sprouts, but many serve this dish over rice. 

POPPYSEED CHICKEN CASSEROLE

Ingredients

  • 3  cups  chopped cooked chicken
  • 1  (10 3/4-oz.) can cream of chicken soup, undiluted (I use low-fat)
  • 1  (16-oz.) container sour cream (again, low-fat)
  • 3  teaspoons  poppy seeds (completely optional, but it's in the title!)
  • 31  round buttery crackers, crushed (Ritz! Low-fat)
  • 1/4  cup  butter, melted (I can't believe it's not butter)

Preparation

1. Combine first 4 ingredients. Spoon mixture into lightly greased 11- x 7-inch baking dish.
2. Stir together cracker crumbs and melted butter; sprinkle evenly over casserole.
3. Bake at 350° for 35 to 40 minutes or until hot and bubbly

Elle Can't Cook: Enchiladas


I love meals that are easy to make and with little chance of failure because, well, I can't cook. One no-fail recipe is a great alternative to a regular old Taco Night. Try enchiladas! I got my recipe from a Weight Watchers cookbook.

Ingredients

10 ounces cooked chicken -- shredded (I use ground cooked turkey meat)

2 cups scallions -- finely chopped (I use onions)

2 1/2 cups enchilada sauce -- canned

6 inch corn tortillas (or look for those with no fat)

1 1/2 ounces part-skim mozzarella cheese -- grated (I used no fat cheddar, since it was what was on hand)


Directions

Preheat oven to 400º F. In a bowl, combine the chicken (turkey), half the scallions (onions), and 1/2 cup of the enchilada sauce.

Soften the corn tortillas, two at a time, by steaming them for 10 seconds.

Spoon 1 cup of the enchilada sauce on the bottom of a 9x11-inch pan. Fill each tortilla with about 1/4 cup of the chicken mixture. Roll each tortilla and place seam side down on the sauce in the pan.


Top with the remaining cup of enchilada sauce, sprinkle with the cheese and the remaining
scallions. Bake for 10 minutes.

YIELD: Serves 8

Out of the oven--I tried to be "Rachel Ray" and not measure the cheese. Disaster as you can see!


I added some green onions, salsa (my black bean salsa is good with this too), and shredded lettuce.

DIY: Dining Alfresco

The phrase al fresco simply means "in the fresh air" or to dine outside. I like to think of it as a fancier version of a picnic. With summer in full swing, I wanted to share my favorite tips and recipes for your own al fresco adventure.
  • Plan: You can make this as budget-friendly as you'd like: a cheap bottle of wine with an accompaniment (cheese, bread, crackers, chocolate or grapes). I did this in Paris (c'mon, I HAD to) and it's one of my favorite memories (riding a hot air balloon over Paris was another). Or you can go all out and grill (barbeque). Choose what's best for you. How many people will be joining you? Is it a romantic date? Or a party at home? You could also have a themed dinner!
  • Location: A park is the natural choice, but a patio is just as nice! Al fresco doesn't mean it has to be some exotic location--home is fine! Depending on your meal, bring blankets, cooler, pillows (if at home), chairs, grill, and tables if needed. A very simple way is to dine is to use an old shower curtain as blanket for easy cleanup. I'm lucky that I live right by Piedmont Park. It's one of my favorite places in Atlanta, and is my favorite al fresco spot. Another choice is the beach--so romantic. Can't you just picture it? 
  • Equipment: Again, it depends on the budget and meal here. Use your good silver for that extra touch of chic but good 'ole plastic cutlery works just fine! Use your wine glasses (even if you're serving soda) or a red infamous Solo cup. If bringing fine china makes you cringe (like me), there are plenty of disposable or recyclable options. Since you're probably bringing everything somewhere, keep it simple--just one fork for all meal courses. Cloth napkins are a more stable choice than paper ones that could fly away. As for me, I use a picnic blanket and a bag or cooler to carry my needs. 
  • Set the mood: this depends on the time of day, but a meal under the stars with plenty of candles is simply stellar. Dining on your patio? String up some Christmas lights,or light up the tiki torch, or plug in patio lights. Flowers are a fabulous decoration or centerpiece. Make sure there's plenty of room to sit, so floor cushions are a nice choice. The atmosphere should be cozy and comfy.
  • Meal: My menu is always super simple, especially if I'm toting my supplies to another location. Tapas are a fabulous al fresco meal. I like pre-assembled food, such as sandwiches. Think outside of the bread bag and create wraps or pitas. 
  • Dips are another way to make an easy meal. Think hummus, black bean dip, bruschetta spread, queso or fondue, or olive spread.  
  • A salad is an easy and healthy summer option--beware of foods that spoil in the sun, such as mayo. A cold pasta salad is hearty and easy to pack.
  • Eat the veggies and fruits that are in season. I'm hungry just thinking of the possibilities.
  • Beverages: a cheap bottle of wine works, the Yucca drink featured yesterday works too, water, soda or lemonade are all great choices. Here are some options for drinks that can be made ahead of time or on-site.  
  • Grilling: Here are some great recipes that go beyond hamburgers--think flanked steak.
  • Potluck: Make the experience even more stress-free and have each guest bring a dish. Here are some great recipes.
  • Dessert: Brownies are a no-fuss option. Sea salt brownies are my fave as are chocolate chip cookies. Fruit with yogurt or cream dip is a healthy choice. This cheesecake in a mug is too cute!
  • Activity: If you'd like, have an activity such as a kite, frisbee, or playing cards.
  • Don't forget: to leave the location as you found it. Bring a trash bag just in case. Sunscreen is a must if you're in the sun and lacking shade. Have bug spray or citronella candles on hand in case (mosquitoes are an uninvited guest here in Atlanta). Bring a corkscrew if you're drinking wine (or pour the wine in a sealed carafe). Have a backup plan--in case of rain! Consider the dietary concerns of your guests. Don't forget to find shade or provide some relief from the heat (handmade fans maybe?) 
  • REMEMBER: Don't stress over the dining experience. Again, keep it as simple as you feel comfortable with and as cheap as you'd like. There's no need to get fancy if that's not your style!

Elle Can't Cook: Yucca (Wapatui) Drink


Having a cookout? Going camping? Want a super easy drink that's just PERFECT for summer? Look no further than the YUCCA!

Ingredients:
  • 1 gallon-size pickle jar
  • 3 lemons
  • 3 limes
  • 1 C sugar
  • bag of ice
  • 1 L (fifth) of Tequila
  • 1 towel
Method:
  • pour sugar in pickle jar
  • cut lemons/limes in half
  • squeeze into jar and drop in
  • add tequila
  • shake until sugar dissolves
  • fill to almost top with ice & seal jar
  • shake
  • fill to top with ice (again) and seal
  • shake and add more ice and seal jar
  • wrap towel around the jar, covering top and bottom
  • leave jar alone until the towel sticks to the jar
  • ENJOY!
There's various methods and legends on this drink. I have heard it called different names too. I didn't invent the name or the drink and it has nothing to do with the plant. Some involve shaking the jar and passing it around, taking a drink each time. We just always pour ours into cups/glasses and keep it classy! Ha. Enjoy!

Elle Can't Cook: Quick Breadsticks

If you're new to Elle Sees, every week or so I feature something I've cooked, that turned out well, and that people SURVIVED eating. I *usually* try to feature meals that are easy and healthy to cook. It's a long-running joke that I can't cook, hence the title of this post. Enjoy!


Ok, so maybe you're cooking a little spaghetti or some sort of dinner that needs a little extra something. Or the kids need a snack, you don't have long to cook anything AND you haven't shopped for groceries lately. Homemade breadsticks to the rescue! But you wanna make these quickly, easily, and cheaply. Here's how I do it. And they're really tasty! You need--

  • hot dog buns
Seriously. I buy these super cheap for 59 cents or so. I buy them right before their expiration date (if I want them super cheap) and freeze them. I love the wheat ones best, but the regular ones will do in a pinch.


I cut them in half (which equals 4 sticks per bun), brush on some oil or butter substitute (trying to be healthy), and add garlic or garlic powder.

Pop the sticks into the oven under BROIL and watch them cook into golden deliciousness. Or 375 for about 5 minutes if you're bad at watching the oven!

Here they are in a lovely grilled chicken pasta penne dish.

These could be used for bruschetta, as cheesy breadsticks, for dipping with a little marinara, as pizza sticks, with sun-dried tomatoes and cheese, with Italian seasoning, with salt for a sorta-pretzel, as breadcrumbs, or croutons. And of course hamburger buns could be used as a substitute.

BEACH WEEK! Steamhouse Lounge

Today on BEACH WEEK 2010, I'm bringing the seafood to you, even if you can't get to a beach!

It's a well-known fact around here I have beach on the brain often. Growing up near beaches and some excellent seafood, I get a hankering every now and again. I'm pretty picky when it comes to fried shrimp and was convinced that unless I'm at an ocean view, good shrimp was not to be had in Atl.
Here I was, is the middle of the city, and it felt like I was at the beach! I was in heaven listening to the music with the cool, casual, beachy vibe as I sat on the deck and perused the menu. There's an inside bar, upper deck, oyster bar, and a patio. The staff is super helpful and laid back. 
Known as the "best little dump in Buckhead," The Steamhouse Lounge serves ice cold beer, tropical drinks, oysters, award-winning lobster bisque, fried baskets, a variety of seafood dinners, sandwiches, and choices for land-lovers. I had the fried shrimp basket with my choice of side. It was $10 for a dozen. The shrimp were great! Excellent batter and not greasy. I'll definately be heading back. If you like

ELLE's TIPS: Parking is valet, so have a couple of bucks handy. If you drink, order the Goombay Smash. If you order a basket, you get a choice of either cocktail or tartar, not both, like I'm used to. Everyone in my group had the oysters and the verdict was good--not gritty.

Elle Can't Cook: Semi-homemade Spaghetti

"Oh, your family's Italian? You must be an EXCELLENT cook!"
Um, nope. I leave that to my amazing Mama and sis Jess. I can, cook noodles al dente very well and I can fake cooking spaghetti sauce very well. It's a great comfort food. Oddly enough, I never make meat sauce; it's usually vegetarian and usually out of a jar. Sometimes, I add either chicken to the sauce or make meatballs (my Mama's are the best. Discussion over!) and add them to a pomodoro sauce, which is out of a jar.
So when cleaning out the freezer, I had a little precooked hamburger meat and decided to make some meat sauce. Here's a simple, quick, basic spaghetti. I told you I'm not a cook, loveys.

Noodles: I prefer vermicelli, since they're not as thick as spaghetti. Most people cook 'em too much but the noodles need to be a little chewy. Boil water (I don't add salt or oil or butter. Just water!) and add the noodles. Boil for about 10-12 minutes. About halfway through, I throw in some garlic to flavor the noodles. Totally optional!!

Meat: optional. I put it frozen in the pot and dumped the sauce on top. Again, I usually don't eat meat with spaghetti (weird, right?) when at home.

Sauce: Ragu vegetable. I added Italian Seasoning, an extra can of diced tomatoes (Rotel if you wanna spice things up!), and a few gloves of garlic. I suggest a garlic press. You can pick one up for a few bucks and it makes the garlic melt and makes ALL THE DIFFERENCE.

Cook: Until the sauce bubbles and the meat is warm (remember, mine was precooked). Add as little or as much sauce as you'd like.

Serve: with garlic bread, a salad, or it's just fine as it is!

Another Atlanta Weekend


  • Guess what I'll be up to this weekend? The movie Babies is coming out and I cannot wait to see it! Also, Iron Man 2 is coming out.
  • So what's going on in da Atl? Lots of good stuff, such as: the Dunwoody Art Festival. The weather should be perfect for it.
  • There's Dinner and Dialogue with National Geographic Photog Peter Essick. This looks really cool and I love photography.
  • I'm super excited about the Metro Market. It is open from May 7-30 on weekends. It's like a little taste of Europe with this indoor street fair.

Elle Can't Cook: Black Bean Salsa Salad

The non-cook (me) and bad photog (me) returns again! Apparently I was getting in the mood for Cinco de Mayo earlier this week when I made this salad. This is super, super easy to whip up. I took a big shortcut here but I prefer the homemade version (included as well).
I opened a can of corn (drained and used half, but use more if you're a corn fan), black beans (drained, rinsed), and a can of Rotel. I added a squeezed lime and a 1/2 teaspoon cumin to all of this in a bowl and stirred it. If I make this from "scratch" I use salsa, diced green peppers, onions, tomatoes, green chilli and add to the corn and black beans. This is best if it sits overnight and can be eaten as a dip with tortilla chips.
I used grilled chicken and made a salad but this recipe is so versatile, I've used it as a dip, just on chicken with melted cheese, and with tacos/burritos/etc. Muy delicioso!

Scenes from the Weekend

What did Elle See this weekend? The weather was just amazing this weekend! The Braves were on a winning streak this weekend. YAY!
Since we all know I'm not a cook, I get super excited about anything I make that doesn't burn and/or is edible. I roasted some veggies in the oven with kosher salt, garlic, and extra vir. olive oil. Faboosh!
Saturday there was a Latin festival at Atlantic Station that I stumbled onto. I had some free excellent guacamole from Rosa Mexicano. It ended up getting packed about 2 seconds after I took this pic.
I've slept with a box fan on since college. I heard this dripping sound, and sure enough, the AC was leaking in the living room. I've had two apartments randomly flood in the past, so I'm paranoid when I hear dripping water. Sorry the pic is off, but I was trying to show the outline of the water pattern. It's raining steadily, so I'm not sure if that's the cause or if it's condensation. Anyone care to weigh in?

Elle Can't Cook: Dinner Remix!


Re-re-re-remix!

Since I'm leaving to go to the beach this weekend (more on that later!), I decided to cook up some leftovers.  After a quick glance in the fridge, I found a grilled pork chop, some rice, and some grilled pineapple. I decided to do some pork fried rice and the results were great!

I chopped up the chop and pineapple, threw in the leftover rice, added a little olive oil, and stir fried until crispy. I didn't add eggs because I can't stand them. Weird, I know. And I don't like cats, but that's another post for another day...Then I added some Papa John's garlic butter I found in the fridge, drizzled some soy sauce from the plethora of packets I have (don't we all have these lying about?) and garnished with some freshly snipped green onions. Voila! Dinner is served.

Fried Pickles

So yesterday was the dreaded TAX DAY in America. Despite being unemployed, and making less than last year, I still had to pay taxes. Cringe! In order to ease the sting a little, we went out to eat last night for my Cheat Day. I'm allowing myself one day a week to eat *almost* whatever I want.

As an appetizer, we ordered fried pickles. If you're not from the South, and/or don't enjoy things fried, this probably looks gross! But I assure you, it's SOOO delicious! Fried pickles are exactly what you'd think: thinly-sliced pickles that are deep fried. I've seen them done a variety of ways, but I prefer them thin like this.

Elle Can't Cook: Grilled Tilapia

Something I'm trying to do is learn to be a better cook. I'm half-Italian, and when anyone learns this tidbit of info, he/she automatically decides that I'm a master chef, and will whip up a delicious plate of spaghetti. Sadly, loveys, this is not the case. I'm a horrible cook--my mom and sis are AMAZING cooks. Also, you already know of the desire to lose weight. I'll be posting some of my dinners, so you can see my progress! Enjoy, loveys!

  • Grilled tilapia, with lemon and dill sauce. I dabbled a little fresh sauce on top so you could see it.

  • Grilled veggies--zuccini, green pepper, Vidalia onions, and mushrooms, kebab-style

  • Grilled apple coated with cinnamon. It's at the bottom, and I know it looks gross here, but trust me, it was delicious!
P.S. Ignore the recycled Chick-fil-a cup and imagine it's a crystal goblet with wine in it.
