Elle Can't Cook: Guacamole

This week's recipe is super easy, doesn't involve cooking (yay!) and is a great summer snack. Years ago I tried guacamole and HATED it. I avoided it for many years up until this spring. I tried it at Rosa Mexicano and had to make my own instantly!
Here's how I make mine:
  • 3 ripe avocados
  • 2 vine ripe tomatoes
  • 1 small onion chopped
  • 1 clove garlic chopped fine
  • ½ lime juiced
  • 1/3 cup chopped cilantro
  • Salt pepper to taste
  • Add jalapenos if you want a little kick.

Mix the ingredients. Eat with tortilla chips, baked tortillas, or even pita bread.
A close up of the guacamole. One of the blogs I read said she used olive oil as her special ingredient--if that's you, please let me give you credit.

What's YOUR recipe for guacamole? What's your secret ingredient?

  12. I love guacamole! - Avocados have too much of water content and they don't make good, creamy guacamole.

  13. You had me at ''no cooking''! ;D This is a fantastic recipe, thanks for sharing!

  14. I've never tried guacamole, but after seeing this recipe I'm def. going to have to! It looks delicious-perfect for summer!

Thank you so much for the comment! I don't really have a method-I'm just trying to pay more attention to the amount and the content of what I eat. So.

  15. I never ate guacamole, shame on me but it looks really yummy!

  16. that looks good :) i love avocados

  17. I am a huge fan of the guac too! I consider its own food group. Boudros in San Antonio has perhaps the best guac I have tasted in my travels across the US. A must if you are traveling in Texas.

  18. MMM I love a good serving of guacamole... especially paired with some fresh tortilla chips and a margarita. Never heard about using olive oil. I'll have to try that!

  19. That looks delicious!

  20. Gotta love good guac! I unfortunately have a phobia of cilantro!

  21. So funny, I've been asking friends for good guacamole recipes lately. Will definitely have to try this one!! It looks delish :)

  22. i love love love guacamole. i know there are a lot of things in this world that i have not tried, but it just blows my mind that some people have never tried it!! :)

i make mine with garlic salt and pepper. that's it. simple and delicious.

  23. more food. oh gosh, it looks so yummy

  24. Guacamole is one of my favorite things in the world. If I'm feeling particularly lazy I think it's just as good with just a mashed up avocado with some lime juice and salt! I'll call it "Guacamole for Cheaters" voila!

  25. I realize that guac should be easy to make, but every time I've tried it's been such a fail... Time to try again, because this looks fab!

  26. I think I make mine almost the same way except no tomatoes and my secret ingredient is Tabasco sauce!!! also add tons of fresh ground pepper

  27. YUM! i absolutely love guacamole. everytime i try to make it though, the final product turns out to be a complete disaster. thanks for this recipe! i'll have to try it out.

p.s, i love your name! it reminds me of elle magazine, and legally blonde. both are things i adore! :)

  29. That looks absolutely delicious! Now you have me craving some guac :) I would totally make some right now too if I had any avocados in the house. I sometimes add sour cream to mine for a creamier effect.

  30. i love guacamole! great easy recipe :)

  31. that looks incredible! Now i'm totalllly craving this. Hmm..maybe for dinner?

  32. That looks so good! I use a similar recipe when I make my guacamole. I usually use shallots instead of white onion and sometimes I puree my guacamole in my food processor, depending on my mood.

  33. I love love love guacamole. This one looks awesome! Rosa Mexicano definitely makes a good one too
